Zucchini Nut Bread
2 cups sugar
1⁄2 cup oil
1⁄2 cup unsweetened applesauce
2 cups grated and peeled raw zucchini
1 teaspoon vanilla
3 cups flour
1⁄2 teaspoon baking powder
1 teaspoon baking soda
1⁄2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves or allspice
1 cup chopped pecans
Cream together sugar, oil, applesauce, eggs, zucchini and vanilla. Sift together the dry ingredients and stir into first mixture. Stir in chopped nuts.
Pour into two greased and floured large loaf pans or three smaller pans. Bake at 325 degrees for about 50-60 minutes.
Now, here is her easy, delicious salad to go with it.
4 cups fresh broccoli, cut into bite-size pieces
1 red onion, chopped
1⁄2 pound (or more) sharp cheddar cheese, cut in small pieces
6 slices (or more) thick, cooked bacon (crumbled)
Add a few cashew nuts if you like and/or fresh strawberries or mandarin oranges.
Combine all ingredients and toss with this dressing:
1 cup mayonnaise
1⁄4 cup sugar
2 tablespoons vinegar
